TOP IT WITH WHAT??? Trust me. It’s fantastic! ROASTED SWEET POTATO BOATS Preheat oven to 400 degrees F Wash and cut sweet potatoes in half, lengthwise. On an aluminum foil covered baking sheet, spread oil of choice, I use coconut. Sprinkle oil with pepper, salt, smoked paprika. Rub more oil on the skin of potato, lightly salt, place potato face side down on oil covered baking sheet. Bake 30 minutes or until fork tender. Top with your favorite topping, but I’m telling you, try the cottage cheese.

Corey Taylor | Vegan Recipes on Instagram: "RECIPE ⬇️ Faster Baked Sweet Potatoes (Face-Down Method) ⏱️ It’s November, which means it’s sweet potato season around here, so I’m sharing my 30–40 minute sheet-pan method for tender centers + caramelized edges every single time: How to: 1. Heat oven to 400°F. 2. Slice sweet potatoes lengthwise. Brush cut sides with olive oil, place face-down on a parchment-lined sheet. Brush skins with a little oil. 3. Bake 30–40 min (until a knife slides in easily).

I’ve been seeing people’s comments saying their sweet potatoes aren’t coming out super crispy and caramelized, so here is EXACTLY how I make mine step by step! My biggest tips: - bigger sweet potatoes work better than minis - use a generous amount of olive oil - parchment paper is necessary - they come out best at 375°F for a full hour. I’ve tried higher temps/ less time and it just doesn’t get this caramelized! - let the potatoes sit for 10 min when they come out of the oven!!!! #sweetpotato #e
