These egg noodles of the woods are known as the #CauliflowerMushroom #Sparassisradicata. This is a brown rot “butt rot” mushroom that grows on Douglas Fir and Pine trees here on the west coast. It has piney/woodsy flavor and crunchy cartilage-like texture. I love using it as noodle substitute for pasta dishes, it makes a killer carbonara. Sustainability-wise it’s best to cut off a prime piece of the mushroom but leave the base in the ground so it can keep growing. ....#sparassis #foraging #edibl
